I'm still unsure I like that they've gone about 800 or so years into the futu with Discovery, and now Starfleet Academy. I thought it would make sense to continue Star Trek after DS9/Voyager/Picard in that era. Also, for a long

I wonder if maybe they have something planned, or in mind, to fill the 800 years in between which would be more of a continuation of the pre-existing timeline.

    One can hope. ;)

It's never about what the fans want, but how they can profit from it. I would speculate that the 800 jump was merely a way for the CBS/Paramont to do the show the way they wanted without all established canon to worry about; viewers can't say, "Hey, that's not right" if it hasn't been done before.

That's part of the issue - Now that there is Star Trek canon in the 'past' of Star Trek, now there are canon events in the 'future' in Star Trek, so anything they do in between would have to fit into both the past and future.

I would've liked to see a Star Trek series or some movies that take place directly after DS9, Voyager, and Picard. Also, a couple things I've wanted to see are series or movies that focus on the Enterprise B and C, since we didn't see those very much at all.

    Unfortunately, you are probably right.

I would have liked to see more of the Picard era - early 25th century.
Post Romulus, post Dominion, rebuilding Starfleet after horrendous
losses. The Borg reclaimation project had legs - the idea of ex-Borg
trying to re-integrate into society, some Borg might decide to go off
and form their own communal collectives...

Next thing you know, they'll be hanging out at space ports, passing out fliers, asking people, "Have you heard the word of Borg today?"
