Cholesterol levels don't change dramatically right after
eating, since they reflect longer- term fat metabolism, but a
non-fasting test may show slightly higher triglycerides and
total cholesterol for a few hours.
That's why doctors usually prefer fasting cholesterol tests for
accuracy.
I'll be doing that Sunday night into Monday. My doctor is going to
chew me out for my weight, but when you're on a fixed income, you have
to eat on the cheap.
