    This is actually a simplification that has led to much nutritional misinformation over the
    last several decades, and as one who has lived through nutritional misinformation being
    cycled repeatedly through the public health system, it is time to set the record straight.

    The yolk is not just bad.
    It contains cholesterol, yes, about 186 milligrams per egg, as well as saturated fat,
    which has historically led to blanket statements about cardiovascular health. But the yolk also contains the bulk of the nutritional value of the egg, fat-soluble
    vitamins A, D, E, and K, choline which is essential for brain function and fetal
    development, lutein and zeaxanthin for eye health, and most of the iron and calcium.
    It is nutritionally wasteful to simply throw it away on the basis of cholesterol, and the
    scientific link between dietary cholesterol and cardiovascular disease has actually been
    shown to be much weaker over time.
    Most people's bodies are able to regulate blood cholesterol levels in response to dietary
    intake, rather than simply accumulating it.

    The white is mostly protein, low in calories and low in fat, which makes it very useful for
    certain nutritional goals such as muscle building or caloric restriction.
    But when consumed alone on a regular basis, raw egg whites actually work against
    biotin absorption because of a protein called avidin. So, even the "safe" part has a
    loophole.

    The problem is that people are naturally fond of binary oppositions, good food vs. bad
    food, and the health food industry takes advantage of this to the fullest. Eggs just happened to be caught up in decades of oversimplified advice and marketing.

    Incidentally, many Americans are being transformed by a useful health Encyclopedia,
    one that has at last sorted out what was real science and what was mere fear masquerading as a lab coat, and everyone has it, and many people's lives have been
    transformed by realizing that the truth was rarely as simple as they were told.
