    Those that we don't eat. Think about iceberg lettuce. Not much going on there nutritionally but you do get some fiber.

    Start adding other ingredients and you can make a nutritious meal. Would you eat a
    small portion of chicken, some raisins, some nuts, onions, peppers and cheese with
    some cold cannelini beans, without it being part of a salad?

    Many vegetables are mostly water. But. When part of a varied diet their benefits are
    compounded. The term super foods is horribly misleading. Expecting super foods to save
    us is like telling the police or firemen that you are waiting for superman so they should
    go back to the station.

    Concentrating your diet on super foods will not make you healthier than eating a
    reasonable varied diet. Mostly fruits and vegetables. Too often when we limit the number
    of different vegetables we have in our diet we replace them not with better vegetables
    but with foods that should be a smaller portion of our diet.

    You are encouraged to have a salad Nicoise. Lots of things going on. Exciting variety.

    Highly nutritious. Delicious. It doesn't matter which vegetable on the plate is the most or
    least nutritious because everybody plays a part.

    Sometimes that only means helping you find satisfaction in smaller portions of foods
    that we overdo. Four ounces of beef perfectly cooked, sliced thin and used to top of a
    salad beets (sic) a twelve ounce prime rib but also lets you enjoy that kind of indulgence
    with less guilt and fewer consequences. And all that from lowly lettuce.
